Mango, Pineapple, and Papaya Salsa

I've said this before, but one of my favorite things about living in PdC is the amount of fresh fruits and veggies available here.  (My other favorite thing:  I can save $100 every other month on highlights.  All natural baby!)

I was browsing for recipe ideas the other day for this HUGE pineapple I bought.  I came across several salsas, and decided to try a variation of my own.

Mango, Pineapple, and Papaya Salsa

  • 1 mango or 8 frozen mango chunks- chopped
  • 1/2 cup pineapple- chopped
  • 1/2 cup papaya- chopped
  • 1/2 jalapeño- finely chopped
  • 1/4 cup chopped red onion
  • 2 Tbsp fresh cilantro
  • Juice from 2 limes
Mix all ingredients together and enjoy.  I picture this salsa on a beautiful piece of fresh salmon, sea bass, or even chicken; or enjoy it on tortilla chips.
