Things I am missing, parte dos

As I sit here in a coffee shop, stranded in between school and home because of the torrential downpour, I can't help but think of some of the people and things I miss from home. Fortunately, in Playa del Carmen there is a huge American and European influence, which makes enjoying some of the things I love even easier. Check out my previous post for an example.  And the wonderful advances in technology make talking, texting, and even seeing my friends and family even more convenient.  Thank you Skype and the iPhone!

I'm so fortunate to have such a caring family. But I do miss their physical presence tremendously. I can't wait for my brother, Dan and his fiancé, Jackie, to make the trip down to Me-hico next month. And I'm patiently looking forward to my sister and her husband traveling here in June.

I know it's a little silly to miss something like this, but I love my ring.  Jade surprised me with it after I married him, and he had it designed perfectly. 



Making yummy fruit, veggie, and cheese platters


One of my favorite things to do for company was crack open a good bottle of wine and make this beautiful appetizer.




Baking cookies, cakes, pies... anything!



Because we don't have an oven, I am not able to make these yummy creations, or my famous coconut cream pie. 



Thanks to all my friends and family who have made a HUGE effort to stay in touch with me this last month.  Miss you all so much!

  2. Ohhh your FAMOUS Coconut Cream Pie, I must tell you EVERYTIME I see a piece, you are the first person I think of. You stole Karston's heart with that pie a long time ago.

    Sounds like you guys are having a wonderful time there, I'm just a tad bit jealous, because I always say that i'm gonna run away to Mexico. I was there twice last year, Feburary and October, both times were just wonderful. So enjoy your time there, because Kansas probably isn't going to change a whole lot, LOL.

  3. Aw. Thanks Aunt Trina and Kelsi. Your comments really made me smile and made my day. I hope all is well in Kansas and Oklahoma and you aren't too cold. If you ever want to come for a vacation from the cold, we have an extra bedroom. Anytime, you all are welcome.
